Min’s Cooking : Tom Yum Goong

Hallo there!

Its been a while I’m not cooking.  Haha.

Its been months I’m busy every day, every weekends, but this weekend, I’m back to my tiny little kitchen and cook one of my favorite foods. ^^ Cihuiii!

Yep, another one from which is very very familiar Thai Food. Tom Yum Goong!!! Yay!  :D Not a Red Tom Yum, but a clear Tom Yum. The one like Thai Express’s clear Tom yum.

Okei, okei…..

Lets get started!

You will need:

3 Kaffir Lime Leaves ( aka Daun jeruk purut)–> leaves only, 1-2 limes, 1 Lemon grass, 2-3 chilli bird, mushroom, Chinese parsley.

(This is for 2 serving).

Prawns, peel it and leave the tail.

I like squids, so I add squid :)

4 cups of water.

The mighty Thai Fish Sauce.

Ok then. Lets start to cook. ^^

Boiled the 4 cups of water into a pot.

While waiting for the water to boil, cut the lemon, squeeze it to a bowl. I use 1 lemon per-bowl.

Crushed 1-2 chilli (if you can’t take spicy, leave it whole piece without crushing)

Add 2-3 tablespoon Thai fish sauce. If you like more salty, then add 3 tbsp. Thai fish sauce give you salty flavor without add more salt. ^^

After the water boiled, put the lemon grass, and let it boiled for another 5 minutes.

Then, add the Kaffir Lime Leaves, and mushroom inside the pot.

And u will smell those nice rich flavor comes out from the pot. The kaffir limes leaves really does magic for “tom yum” smell.

Let boiled for 3-4 minutes.

Add the squid wait for 1 minutes…

Ok last step….,

Pay attention…..

must be “quick” ya!

Add the shrimp….

And directly turn off the heat from stove.

The shrimp will be cooked just from the heat of the boiled tom yum stock (soup). And directly scoop the prawns and mushroom to the bowl.

If the prawns overcooked, it will not taste so sweet and the texture will not chewy.

You will see a cloudy soup because of the lime that we squeeze into bowl just now. And I can tell, this is really really fresh Tom Yum Goong ever.

Done, we all done! Easy right? Admit it! Haha. And very very less dish washing too.

Last, put the parsley to the top as a garnish and add more rich flavor and smell for the tom yum. I put the Kaffir lime leaves into a bowl too, it just make it looks prettier. Hehe.

So… Tadaaaaaa.

Again, it taste really fresh. The lime, Kaffir Lime Leves and parsley flavor and smell blended very well. It tasted so Asian, haha. The most awesome is, FRESH. U will feel the shrimp taste tender and chewy, so as the mushroom, and feel the freshness at the same time. Really…. ^^

Min’s Cooking: “Homey” Garlic Prawn

Um….

We all love garlic, fresh prawn and fried food.

Agree? ^^

So…… I found this fresh prawn (and surprisingly big with good price) and I decided to cook garlic prawn  and make this blog post, especially for my dearest friend, Pau2. She wants a simply, easy, yet yummy recipe. This is the most easy (siapa-pun-tahu recipe), haha. And I guarantee, u’ll like it.

Prawns (Unpeeled), + taburin some salt…

Garlic (wash and pat it dry) in cloves, unpeeled.

New Vegetable oil, and black sweet soy sauce.

Heat the oil, fried the garlic in cloves. Yepp, we wants the crispy brownish garlic, and we wants the garlic flavor stays in oil.

Put it on a tissue paper, it will absorb the excess oil.

yes, fried garlic. I love it! The smell, the taste, the brownish. ^^

So, with the “Garlic flavor oil”, fried the prawns. Be careful of the muncrat oil, okei? ^^

Let the excess oil absorb with tissue paper.

Mixed the fried prawns with crispy brownish garlic.

And put black soy souce aka kecap manis on the top. Put as much as you like.

Tadaaaaa……….. all done.

It just Homey and delicious. And for garlic fans, it just garlic everywhere. Hahaha…..

So, i know u all knew this recipe, haha, I’m so much sure, u usually make better than mine. ^^ wakakakaka…..

Min’s Cooking : Korean Soy Bean Paste Soup (Dubu Doenjangjjigae)

This Saturday, I finally can learn and try to cook Korean tofu soy bean paste soup a.k.a Dubu Doenjangjjigae (dunno if i spelled it right, haha).  I followed the recipe from here.

This recipe, we need to prepare some details. But, the food is really healthy from the ingredients. I can guarantee that. So, please try. Its really worth for the taste for prepare the details :)

As I read from my Shi Fu Google, this Dubu Doenjangjjigae, is a very common soup/stew soup in Korean. And for a balance diet, this kind of food is totally MINMERRY recommended!!! Huahahaha. Less fat, no oily, and freshness guarantee.

Ok, then! Lets see what we should prepare.

Find your most comfy t-shirt, home-pants, and lets cook! ( :D ) Lets the world busy it self, we busy in our own kitchen. :P

There is three parts of the Ingredients. I try to put the details here with the picture, so its easier for you to follow. :)

Part 1. The Beef

You’ll need :

Beef1

- 1 cup of minced beef ( You can use 1/2 cup, but my Kung Pi a.k.a Hubby loves beef, so I put more)

- 2 piece of dried mushroom, soak in water and slice it into small cute tiny pieces. (in the picture u can see I soak 4 piece of dried mushroom, the two of them I’ll use it later. )

- 1 Table spoon of soy sauce (light) a.k.a kecap asin

- 1 half tablespoon of garlic (very must have item on my cooking, wakaka)

- 1 teaspoon of sesame oil

- 1 teaspoon of sugar

- Pinch of black pepper

Beef2

Ok then! Lets prepare the beef,

- Put the minced beef and sliced mushroom  in one big bowl,

- Put pinches of black pepper, 1 tbsp of soy sauce, 1 teaspoon of sugar, 1 teaspoon of sugar, and 1/2 tablespoon of garlic

and, mix it!

I use hands, because i love the sensation. If you want to avoid smelly hands, use some plastic hand gloves or just use spoon to mix it well.

Ok then, lets do the veggies!

Part. 2  The veggies :)

Vegies

- 1 Green onion, slice into small pieces or 2cm, up to u :)

- 1 Green Pepper, slice into small pieces

- 1 Onion, slice into small pieces.

- 1 medium large potato, cut into small tiny cute little pieces

- 1 cup of Zucchini. Aka Japanese Cucumber. If u can’t find zucchini, use “pasar” cucumber also no prob, I taste it, it taste the same for me. But zuchini is cuter. Seriously.

- 1/2 cup of Chinese tofu

Part 3. For the broth

- 6 p of giant anchovy  a.k.a giant ikan teri. I remove the intestine and the head, it looks scary to me, haha!

- 3 cups of water.

and the very important one, u’ll also need :

Chili paste

- Chilli powder

- Soy Bean Paste

- Chilli Paste (medium hot)

This is how Soy Bean Paste (similar to “Tau Co” paste) & Chilli paste looks like.

Lets cook! The very most fun part, :DDDDDDDD

Usually the korean people use the black bowl to cook, but I don’t have it. So I use my partner-pot as usual.

Broth2

Heat the water until it boiled. Put the anchovy. Boiled it for 5- 10 minutes.

After it boiled, remove the anchovies :D

Beef3

Then while waiting for the water boiled, heat one pan. Put some vegetable oil. And cook the mixed-minced-beef until it gets brownish. :) This part u’ll feel soo happy just because of the smell. It smell really really good. :D Be careful of the oil, it may “percik” on you.

I like to cook use this “sendok”, especially for stirring. Very recommended. Not to big, and fit perfectly with my small pan. Easier to stir and the material not going to scratch the pan. This spoon is a gift when we first came to Singapore from school. Like it!

Thennnn, after the meat get brownish, put it into the pot for boiled. The smell and the sensation will make you excited, wkaaka.

Boiled it for couple of minutes. Then put the onion, zucchini, and the potato. You will see the contrast, and I really love the color! Wohoooooo!

Boiled on high.

And u’ll see the fat at this stage, remove, remove, remove! We don’t want the fat.

And let it boiled for 4-5 more minutes.

Add 2 spoon of the soy bean paste, 1 spoon of chilli paste and half tea spoon of chilli powder.

If you not get used to hot and spicy soup, just skip the chilli paste, chilli powder and green pepper. But I really suggested you to enjoy this spicy soup. The spicy makes the taste more better. :DDDDD

Stir it a while.

And put the tofu. :)

Stir slowly.

Add the green pepper. And green onion.

Wait for two minutes.

Taste it, if you find not to salty, please put some salt. I did it, i put more salt.

This is really nice, i love the veggies and the “kenyal-kenyal” of the meat and mushroom texture. Must try, okay? :D

Actually, its kind of easy right? Hehe. Even kung pi likes it, he hates onion and vege soup, but he likes it. So,please try! Please let me know. Please share with me :DDDDD After one week eating deep fried, oily food, this recipe is a perfect match for rainy Saturday weekend.

If in a restaurant, a waiter asked me, “How would you like the egg for your breakfast?”

I would reply, “In shaped.” Haha!

Min’s Cooking : Dukbokki aka Topoki

Dukbokki is a popular Korean snack food, which is so easy to make, which iiiiis  alsoo…  very famous, and all who Korean movie lover will love to eat! And all spicy food lover will craving for. :DDDDDD I feel so much curious about the spicy. So, today I decided to try make this Korean  snack.

I love to call it topoki. Easier. Haha! All this stuff can easily bought at supermarket, and the pricing is very cheap. So, for a lazy Saturday cooking, its a very simple dish for you to try :))))))) Most of the ingredients also are vegetables. So, its just good. :D

Dukbokki is a popular Korean snack food, which is so easy to make. And I feel so much curious about the spicy. So… Lets start.

What we will need is :

Korean Rice Cake, Topoki Sauce (instant sauce –> easy, easy, easy. Haha!) Carrot, Onion, Spring Onion (or you can use green onion) and Cabbage. I think i have a serious issue about onion and carrots, I just love them very much. Haha.

I use this brand of Korean rice cake. And today I tried to make small amount of it. Just one cup.

Only the water is boiled, put the vege inside. Carrots, Onion, and cabagge.

Yes, Kung Pi help me take pic. :) And after stir it a while, put the rice cake inside. Let it cook for 3 minutes. Until the vegetables are tender.

And last,put the sauce inside. I found it not salt enough,so i put 1/4 tea spoon of salt.

Stir it until the sauce thickens and shiny. If u like very thick,then stir it more longer. Then just a minute before you turn off the heat, put the onion inside. You’ll smell a very delicious taste and beautiful color of topoki.

Finally, tada…….
